May is National Egg Month, which serves as a timely reminder of how awesome eggs are!

It certainly outperforms many other dishes and makes an outstanding meal. We utilize eggs for a few purposes as well. Although they are necessary for baked items, eggs also make an excellent meal on their own. Eggs are a great source of protein whether boiled, roasted, fried, or basted. Since the very beginning of humankind’s existence on Earth, eggs from several kinds of fowl (birds) have undoubtedly been ingested. Peafowl eggs were consumed by ancient Romans, and pigeon eggs were popular with the Chinese. Ostrich eggs have been consumed since the time of the Phoenicians, but quail eggs are now found on many gourmet food counters in Europe, the US, and Japan as hard-cooked, shelf-stable packaged items. Other types of eggs eaten by different ethnic groups include those from gulls, turkeys, pelicans, ducks, and geese.

HISTORY

Since the 1960s, National Egg Month has been commemorated. However, when the egg’s image deteriorated for a while, National Egg Month lost the distinction to other months. However, National Egg Month was reinstated in May by the Egg Board in the 1990s. We have gone a long way in learning more about the variations in cholesterol and what it means for our well-being because studies have been shedding light on good and bad egg nutrition.
