Eggs & Diabetes: To eat or not to eat?

Diabetes type 2 is a lifelong condition that roughly affects 4.6 million people in the UK alone, with an estimated 500,000 people who lives undiagnosed with this condition. This is due to the fact that your bodies does not produce enough insulin, or your body’s cells don’t react to insulin. It is important in this case to keep your blood sugar levels well-controlled, therefore incorporating certain foods into your diet. A recent study found that people with type 2 diabetes who each consumed 2 eggs on a daily basis had improvements in cholesterol and blood sugar levels. It is however advised to eat the whole egg, as the nutrient content in the egg yolk is much higher than in the egg white.

Here are some healthy meal ideas that are less than 500 calories and include egg:

 

  • Scramble one egg and two egg whites – add any non-starchy vegetables to your scramble. Serve the egg scramble on top of 1 slice whole grain toast with a smear of avocado. Add a serving of seasonal fruit.
  • Mix 2 hard-boiled cooked eggs with one egg white with an avocado and serve it with a slice of lettuce and tomato on whole-wheat toast. Add a serving of fresh seasonal fruit.
